Pierre-Achille Masse, Frédéric’s great-grandfather, began his career as a fresh truffle broker. In 1884, he moved to Paris. Today, the house MASS has retained a strong involvement in the truffle. At each season you will find the fresh truffle that meets your expectations. These truffles are washed, brushed, sorted and calibrated according to your needs.
- Alba white truffle
Renowned but rare, this truffle is harvested in Piedmont in Italy, in the region of Alba. It has a strong garlic flavor and does not go well with foie gras. By cons, it is delicious raw served at the last moment.
Usually available from October to December.
